The word enzyme comes to us from the Greek words en (ἐν), meaning “in,” and zymē (ζύμη), meaning “leaven.” Enzymes are proteins that act as biological catalysts within cells, so it is easy to understand why they may have been described as the “internal leavens” given their chemical role in fostering and feeding internal cellular reactions.
